The Producer
Miriam Quesada Enciso is a second-generation coffee producer. She inherited Finca El Guayacan from her ex-husband when they split their land and has been cultivating coffee on the farm since 2005. Today, Miriam, manages Finca El Guayacan where they focus on high-quality cultivation and processing.
The Lot
This lot is composed of Pink Bourbon. When it comes to the processing, following harvest, the coffee cherries are floated in order to remove lightweights. The good quality cherries are then placed in sealed bags and fermented for 4 days. After that, the cherries undergo a careful drying process, in a dedicated facility, with frequent turning to ensure uniform drying until it reaches the optimal level of humidity
